Ingredients
(for 6 servings)
1 cup full-fat greek yogurt(285 g)
2 cups gluten-free flour blend(250 g), plus more for flouring
2 teaspoons baking powder
(salt, as desired)
Preparation
1. In a large bowl, mix together the yogurt, gluten-free flour blend, baking powder, and salt until a dough rough forms.
2. Tip out and knead into a dough, add dusting flour as needed.
3. Divide dought the disk into 6 equal parts and roll each out into a thin round.
4. Very carefully transfer the dough pieces to a nonstick pan preheated over medium heat. Cook each side of the flatbread until well browned.
5. Place on a rack and spread tomato base. Add cheese and desired toppings.
